Factors Involved with the Incidenc of Black Stain in ¢¥ Niitaka ¢¥ Pear during Storage

Abstract

|
The incidence of black stain on the ¢¥Niitaka¢¥ pear fruit increased during storage as harvest delayed and by PE film packaging. Mycelium was observed on black stained epidermis of ¢¥Niitaka¢¥ pear both by light microscopy and scanning electron microscopy. The external appearance of the mycelium was similar to that of fungus, Gloeodes pomigena which causes sooty blotch in apple and pear. Analysis of electrolyte leakage, total phenolics, and polyphenol oxidase activity indicated that there are difference in occurrence mechanism between black stain and blackening. The black stain, however, resulted from the accumulation of melanin pigment, the property of which was similar to that involved in the incidence of surface blackening.
